Saaby Simon

Ms. Saaby Simon is an Associate Attorney at Zambrano Law. She is a committed legal profession with experience assisting individuals and families through complex legal matters involving asylum, removal defense, humanitarian relief, and other immigration-related proceedings. Through her work in both public interest and defense settings, she has prepared submissions before the U.S. Citizenship and Immigration Services (USCIS) and the Executive Office for Immigration Review (EOIR), drafting legal briefs and motions, and supported clients navigating high-stakes legal processes with diligence and compassion.

A graduate of Emory University School of Law, Saaby earned her Juris Doctor with a concentration in criminal litigation. During law school, she served as President and Student Initiatives Chair of Emory’s Public Interest Committee (EPIC), Treasurer of the Criminal Law Society, and an active member of the Latin American Law Student Association (LALSA). She also dedicated significant time to advocacy and community service through the Juvenile Defender Clinic, the Immigrant Legal Assistance Clinic, and Know Your Rights initiatives. Saaby continues to work with students at different speaking engagement across Georgia – focusing on dialogue surrounding education and exploration of career pathways. Her academic and professional experiences have strengthened her commitment to equitable representation and reinforced her passion for serving vulnerable communities through thoughtful and client-centered advocacy.

Fluent in Spanish and currently learning American Sign Language, Saaby is deeply committed to accessibility, cultural understanding, and effective communication within the legal system. Her background in immigration, juvenile defense, and public service reflects a broader dedication to empowering individuals and ensuring that every client is treated with dignity, respect, and care. She approaches each matter with professionalism, empathy, and an unwavering commitment to justice.
